1 cup rolled oats

1 cup whole wheat flour

1/2 cup vanilla protein powder (whey or plant-based)

1/2 cup Greek yogurt (plain, unsweetened)

1/3 cup honey or maple syrup

1/4 cup unsweetened applesauce

1 cup fresh blueberries (frozen can be used but do not thaw)

1/4 cup almond milk (or any milk of choice)

1 large egg

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon vanilla extract

1/2 teaspoon cinnamon (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it lightly or lining it with muffin liners.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the rolled oats, whole wheat flour, protein powder, baking powder, baking soda, salt, and cinnamon (if using).

      Mix Wet Ingredients: In another bowl, mix the Greek yogurt, honey or maple syrup, applesauce, almond milk, egg, and vanilla extract until well combined.

        Combine Mixtures: Pour the wet mixture into the bowl of dry ingredients. Gently fold the ingredients together with a spatula until just combined. Be cautious not to overmix; it's okay if a few dry spots remain.

          Fold in Blueberries: Carefully fold in the fresh blueberries, ensuring they are evenly distributed without smashing them.

            Fill Muffin Tins: Spoon the batter into your prepared muffin tin, filling each cup about 3/4 of the way full.

              Bake: Place the muffin tin in the oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

                Cool: Remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely.
