2 cups cooked chicken breast, shredded or diced

1 cup red grapes, halved

1/2 cup almonds, sliced or slivered

1/2 cup plain Greek yogurt

2 tablespoons Dijon mustard

1 tablespoon honey (optional)

1 tablespoon lemon juice

Salt and pepper to taste

1/4 cup green onions, chopped (optional)

Fresh spinach or mixed greens for serving

Prepare the Chicken: If you haven't already, cook and shred or dice the chicken breast. This can be done ahead of time using rotisserie chicken or by boiling the chicken in salted water until cooked through, about 12-15 minutes. Let it cool before handling.

    Mix the Dressing: In a medium bowl, combine the Greek yogurt, Dijon mustard, honey (if using), lemon juice, salt, and pepper. Whisk well until smooth and creamy.

      Combine the Salad Ingredients: In a large mixing bowl, add the shredded chicken, halved grapes, sliced almonds, and green onions (if using). Pour the dressing over the top.
