1 lb ground chicken

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 medium red bell pepper, diced

1 medium yellow onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade)

1 cup diced tomatoes (fresh or canned)

1 cup low-sodium chicken broth

1 cup cooked quinoa (optional, for added texture)

1 cup shredded reduced-fat cheddar cheese

1 cup Greek yogurt (for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Salt and pepper to taste

Olive oil for cooking

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Chicken: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.

      Add Ground Chicken: Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Season with salt, pepper, and taco seasoning, stirring well to combine.

        Mix Ingredients: Once the chicken is cooked through, add the black beans, corn, diced tomatoes, chicken broth, and cooked quinoa (if using) to the skillet. Stir everything together and let it simmer for about 5 minutes to allow the flavors to meld.

          Layer the Casserole: In a 9x13 inch baking dish, spread half of the chicken mixture evenly at the bottom. Sprinkle half of the shredded cheese on top. Repeat with the remaining chicken mixture and finish with the rest of the cheese.

            Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
