Ingredients

1 cup Medjool dates, pitted

1 cup raw almonds

1/2 cup unsweetened cocoa powder

1/4 cup shredded unsweetened coconut

1/4 cup nut butter (almond or peanut)

1 tablespoon chia seeds

1 teaspoon vanilla extract

A pinch of sea salt

Optional: 2 tablespoons honey or maple syrup (for extra sweetness)

Topping: Extra shredded coconut or crushed nuts (for rolling)

Instructions

Prepare the Ingredients: Start by pitting the Medjool dates if they are not already pitted. Soak the dates in warm water for about 10 minutes if they are dry, then drain well and set aside.

Blend the Nuts: In a food processor, add the raw almonds and pulse until they are finely ground but not turned into flour. You want some texture to add to your energy balls.

Combine Ingredients: Add the soaked dates, unsweetened cocoa powder, shredded coconut, nut butter, chia seeds, vanilla extract, and a pinch of sea salt to the ground almonds in the food processor.

Process Until Sticky: Blend all the ingredients together until the mixture is well combined and sticky enough to hold together. If the mixture is too dry, you can add water a teaspoon at a time; if it's not sweet enough, add honey or maple syrup to taste.

Form the Balls: Once the mixture is ready, use your hands to scoop out about a tablespoon of the mixture and roll it into a ball shape. Repeat with the remaining mixture.

Add Toppings: If desired, roll the balls in shredded coconut or crushed nuts for a delicious finish.

Chill and Enjoy: Place the chocolate date balls in an airtight container and refrigerate for at least 30 minutes to help them firm up. Enjoy as a quick snack or a sweet treat!
