Ingredients

4 medium zucchinis, sliced into half-moons

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon fresh oregano leaves (or 1/2 teaspoon dried oregano)

1/2 teaspoon red pepper flakes (optional for heat)

Salt and black pepper, to taste

Juice of 1 lemon

Fresh parsley, chopped, for garnish

Instructions

Prepare the Zucchini: Rinse the zucchinis under cold water and pat them dry. Cut off the ends and slice them into half-moons about 1/4 inch thick.

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Allow it to warm up for about 1 minute.

Sauté Garlic: Add the minced garlic to the skillet and sauté for about 30 seconds, or until fragrant. Be careful not to let it burn.

Cook Zucchini: Add the sliced zucchini to the skillet. Toss them in the garlic oil, spreading them out evenly across the skillet.

Season: Sprinkle the fresh thyme, oregano, and red pepper flakes (if using) over the zucchini. Season with salt and black pepper to taste. Stir to combine.

Sauté Until Tender: Continue to cook, stirring occasionally, for about 5-7 minutes, or until the zucchini is tender but still crisp. Adjust the cooking time based on your preference for tenderness.

Add Lemon Juice: Once the zucchini is cooked to your liking, remove the skillet from heat. Squeeze the juice of one lemon over the sautéed zucchini and give it a final toss.

Garnish and Serve: Transfer the zucchini to a serving dish, sprinkle chopped fresh parsley on top for added color and flavor, and serve immediately as a side dish or a healthy main.
