1 cup almond milk (or any milk of your choice)

1/4 cup chia seeds

2 tablespoons maple syrup (or honey for non-vegan)

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and chopped

1 tablespoon lemon juice

A pinch of salt

Fresh mint leaves for garnish (optional)

In a medium bowl, whisk together the almond milk, chia seeds, maple syrup, vanilla extract, and a pinch of salt until well combined.

    Allow the mixture to sit for 5 minutes, then whisk again to prevent the chia seeds from clumping.

      Cover the bowl and refrigerate for at least 2 hours (or preferably overnight) to allow the chia seeds to absorb the liquid and form a pudding-like consistency.

        While the chia pudding is setting, prepare the strawberry topping. In a small bowl, toss the chopped strawberries with lemon juice. Let them sit for about 10 minutes to marinate, allowing their natural juices to release.
