2 cups rolled oats

1 cup whole wheat flour

1/2 cup almond butter (or any nut butter of choice)

1/3 cup honey or maple syrup

1/2 cup unsweetened applesauce

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon salt

1 cup fresh strawberries, hulled and chopped

1/4 cup chia seeds (optional, for added fiber and omega-3s)

1/2 teaspoon cinnamon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving an overhang on the sides for easy removal later.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, salt, chia seeds, and cinnamon (if using). Stir until well mixed.

      Combine the Wet Ingredients: In a separate bowl, whisk together the almond butter, honey (or maple syrup), applesauce, and vanilla extract until smooth.

        Combine Both Mixtures: Pour the wet mixture into the dry mixture and stir until just combined. Gently fold in the chopped strawberries, being careful not to mush them.

          Spread the Mixture: Transfer the mixture to the prepared baking dish. Use a spatula to spread it out evenly, pressing it down firmly so that it holds together.

            Bake: Bake in the preheated oven for about 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

              Cool and Slice: Once baked, remove from the oven and let it cool in the pan for 10 minutes. Lift out the bars using the parchment overhang and place on a wire rack to cool completely. Once cool, slice into squares or bars.

                Store: Store the bars in an airtight container at room temperature for up to 1 week, or refrigerate for longer freshness.
