Ingredients

1 lb ground beef

4 strips of bacon, chopped

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juices)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup cooked elbow macaroni

1 tablespoon Worcestershire sauce

1 tablespoon mustard

1 teaspoon smoked paprika

Salt & pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels, leaving about 1 tablespoon of bacon grease in the skillet.

Sauté the Vegetables: In the same skillet, add the diced onion, bell pepper, and garlic. Sauté for about 5 minutes or until the vegetables are softened.

Brown the Beef: Add the ground beef to the skillet. Cook until browned, breaking it up with a spatula as it cooks. Drain excess fat if necessary.

Combine Ingredients: Reduce the heat to low, and stir in the kidney beans, diced tomatoes, Worcestershire sauce, mustard, smoked paprika, and cooked elbow macaroni. Season with salt and pepper to taste. Stir well to combine.

Add Cheeses and Bacon: Fold in half of the cheddar and mozzarella cheeses along with the crispy bacon, mixing until evenly distributed.

Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it out evenly.

Top with Cheese: Sprinkle the remaining cheddar and mozzarella cheese on top of the casserole.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

Garnish: Once out of the oven, let the casserole sit for a few minutes before serving. Garnish with freshly chopped parsley for a pop of color and flavor.

Serve: Scoop out portions and enjoy this delicious hearty meal that is perfect for any occasion!
