Ingredients

1 pound ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juices)

1 cup corn (frozen or canned)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1 cup crushed tortilla chips (optional for topping)

Fresh cilantro, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Beef: In a large skillet over medium heat, brown the ground beef until fully cooked (approximately 5-7 minutes). Drain excess fat if needed.

Add Vegetables: Add the chopped onion and minced garlic to the skillet with the beef. Sauté for 3-4 minutes until the onion becomes translucent.

Mix in Beans and Tomatoes: Stir in the black beans, kidney beans, diced tomatoes, and corn. Combine well.

Season the Mixture: Add chili powder, cumin, smoked paprika, salt, and pepper to the mixture, stirring to combine. Let it simmer for an additional 5 minutes.

Assemble the Bake: Transfer the beef and bean mixture into a 9x13-inch baking dish. Sprinkle half of the shredded cheddar cheese over the top.

Add Tortilla Chips (Optional): If desired, sprinkle crushed tortilla chips over the cheese layer for added crunch.

Top with More Cheese: Add the remaining cheddar cheese on top of the dish.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbling and golden brown.

Garnish and Serve: Remove from the oven, let cool for a few minutes, and garnish with freshly chopped cilantro before serving.
