1 large onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 red bell pepper, diced

1 teaspoon dried thyme

1 teaspoon red pepper flakes (adjust to taste)

4 cups vegetable broth

1 (14-ounce) can diced tomatoes, undrained

1 (15-ounce) can cannellini beans, drained and rinsed

1 (15-ounce) can kidney beans, drained and rinsed

1 bunch of Tuscan kale (also known as lacinato or dinosaur kale), stems removed and roughly chopped

Salt and black pepper to taste

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Heat the Olive Oil: In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat.

    Sauté the Aromatics: Add the diced onion and sauté for about 5 minutes until the onion is translucent. Stir in the minced garlic, and cook for an additional minute until fragrant.

      Add Vegetables: Incorporate the diced carrots, celery, and red bell pepper. Sauté the mixture for 5-7 minutes, or until the vegetables begin to soften.
