2 cups cooked, shredded chicken (preferably rotisserie)

1 cup Greek yogurt (plain)

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon honey

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon fresh lemon juice

½ teaspoon salt (to taste)

½ teaspoon black pepper (to taste)

¼ cup fresh parsley, finely chopped

¼ cup fresh dill, finely chopped

¼ cup fresh chives, finely chopped

1 cup celery, diced

1 cup red grapes, halved (or apples, if preferred)

½ cup walnuts or pecans, chopped (optional)

Instructions
 

In a large mixing bowl, combine the Greek yogurt, mayonnaise, Dijon mustard, apple cider vinegar, honey, garlic powder, onion powder, lemon juice, salt, and black pepper. Mix well until smooth.

    Add the shredded chicken to the bowl and gently fold it into the yogurt mixture until fully coated.

      Stir in the chopped parsley, dill, and chives, ensuring they are evenly distributed throughout the chicken mixture.

        Fold in the diced celery and halved grapes (or apples) for a crunchy texture and a hint of sweetness.

          If using, add the chopped walnuts or pecans for an added crunch. Mix until combined.

            Taste and adjust the seasoning with additional salt and pepper if needed.

              Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together. For best results, let it sit for 2-3 hours.

                Serve chilled on a bed of mixed greens, in a sandwich, or with crackers.
