Ingredients

1 pound ground beef (or turkey for a lighter option)

1 cup diced onion

1 cup diced bell peppers (any color)

2 cups chopped potatoes (russet or red potatoes)

1 can (15 oz) green beans, drained (or 2 cups fresh)

1 can (10.5 oz) cream of mushroom soup (or a homemade version)

1 cup shredded cheddar cheese

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Aluminum foil (for layering)

Instructions

Preheat Oven/Prepare Campfire: If using an oven, preheat to 375°F (190°C). If cooking over a campfire, prepare hot coals.

Prep the Ingredients: In a mixing bowl, combine the ground beef, diced onions, bell peppers, chopped potatoes, green beans, cream of mushroom soup, Worcestershire sauce, garlic powder, paprika, salt, and pepper. Mix until everything is well combined.

Create Foil Packets: Tear off large sheets of aluminum foil (about 12x18 inches). Scoop the casserole mixture into the center of each sheet. Fold the sides of the foil over the mixture and then fold the ends to create a tightly sealed packet. Be sure to leave a little space inside for expansion as the food cooks.

        Cooking Method:

          - Oven: Place the foil packets on a baking sheet and bake for 45-50 minutes or until the potatoes are tender.

            - Campfire: Place the foil packets on hot coals for 25-30 minutes, turning occasionally. Cooking times may vary based on coal heat, so check for tenderness.

Add Cheese: Carefully open the foil packets (watch out for steam!) and sprinkle the shredded cheddar cheese over the top. Reseal the packets and return them to the heat for an additional 5 minutes, just until the cheese melts.

Serve and Enjoy: Open the packets and serve the hobo casserole straight from the foil. Optionally, garnish with fresh herbs like parsley or chives. Enjoy your cozy and hearty meal!
