Homemade Chicken Parmesan Sliders

1 lb boneless, skinless chicken breasts

1 cup breadcrumbs (preferably Italian-style)

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp dried oregano

½ tsp salt

¼ tsp black pepper

2 large eggs

1 cup marinara sauce (plus extra for serving)

1 ½ cups shredded mozzarella cheese

12 slider buns (preferably brioche or potato)

Fresh basil leaves (for garnish)

Olive oil (for frying)

Instructions
 

Prepare the Chicken: Preheat your oven to 375°F (190°C). Slice each chicken breast horizontally to create thinner cutlets. Pat them dry with paper towels.

    Prepare the Breading Station: In one shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper. In another bowl, beat the eggs until fully combined.

      Bread the Chicken: Dip each chicken cutlet first into the egg mixture, allowing any excess to drip off, then coat thoroughly in the breadcrumb mixture. Press the breadcrumbs onto the chicken to ensure they adhere well.

        Fry the Chicken: In a large skillet over medium heat, heat about ¼ inch of olive oil. Carefully add the breaded chicken cutlets in batches, cooking for about 4–5 minutes per side or until they are golden brown and cooked through. Once done, place the chicken on a paper towel-lined plate to absorb excess oil.

          Assemble the Sliders: In a baking dish, arrange the bottom halves of the slider buns. Top each bun with a chicken cutlet, spoon about a tablespoon of marinara sauce over each piece, and sprinkle mozzarella cheese generously on top.

            Bake the Sliders: Place the top halves of the buns gently over the cheese layer. Cover the dish with aluminum foil and bake in the preheated oven for 10 minutes. Afterward, remove the foil and bake for an additional 5 minutes, or until the cheese is bubbly and golden.

              Serve: Once out of the oven, garnish the sliders with fresh basil leaves. Serve the sliders warm, with additional marinara sauce on the side for dipping.
