Instructions

Prepare the Shortcake:

    - Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

      - In a large bowl, whisk together flour, sugar, baking powder, and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.

        - Create a well in the center of the mixture and pour in the heavy cream and vanilla extract. Stir until just combined.

          - Turn the dough onto a floured surface and gently knead it just a few times until it comes together. Pat it into a 1-inch thick rectangle. Cut into squares or circles.

            - Place the shortcake pieces on the prepared baking sheet and bake for 15-20 minutes or until golden brown. Let them cool completely.

              Make the Honey Berry Filling:

                - In a medium bowl, combine the mixed berries, honey, lemon juice, and lemon zest. Gently toss to coat the berries. Set aside to allow the flavors to meld for about 15 minutes.

                  Prepare the Whipped Cream:

                    - In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract using an electric mixer until soft peaks form.

                      Assemble the Trifles:

                        - In individual serving glasses or a large trifle dish, start by breaking a piece of shortcake and layering it at the bottom.

                          - Add a layer of the honey berry filling on top, followed by a dollop of whipped cream.

                            - Repeat the layers until the glasses are full, finishing with the whipped cream on top.

                              Garnish:

                                - Top with fresh mint leaves and a few extra mixed berries for a beautiful presentation.

                                  Serve:

                                    - Serve immediately or refrigerate for up to 2 hours before serving. Enjoy your delicious Honey Berry Shortcake Trifles!
