For the Chicken Marinade:

1 lb boneless, skinless chicken breast, diced

3 tablespoons honey

2 tablespoons soy sauce

1 tablespoon rice vinegar

3 cloves garlic, minced

1 teaspoon ginger, grated

1 tablespoon cornstarch

Salt and pepper, to taste

For the Stir Fry:

2 tablespoons vegetable oil (or sesame oil for added flavor)

1 bell pepper, sliced (any color)

1 cup broccoli florets

1 cup snap peas

1 medium carrot, thinly sliced

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken:

    - In a medium bowl, combine the honey, soy sauce, rice vinegar, minced garlic, grated ginger, cornstarch, salt, and pepper.

      - Add the diced chicken and mix well, ensuring all pieces are coated.

        - Cover and marinate in the refrigerator for at least 30 minutes.

          Prepare the Vegetables:

            - While the chicken marinates, wash and chop the vegetables.

              - Make sure to slice the bell pepper and carrot thinly for even cooking.

                Cook the Chicken:

                  - Heat one tablespoon of vegetable oil in a large skillet or non-stick wok over medium-high heat.

                    - Add the marinated chicken (discard any excess marinade) and cook for about 6-8 minutes, or until golden brown and cooked through. Stir occasionally to avoid sticking.

                      - Once cooked, remove the chicken from the skillet and set aside.

                        Stir-Fry the Vegetables:

                          - In the same skillet, add the remaining tablespoon of oil.
