1 lb (450g) boneless, skinless chicken thighs (cut into 1-inch cubes)

1/4 cup honey

1/4 cup soy sauce

4 garlic cloves (minced)

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon ground ginger

Salt and pepper to taste

2 bell peppers (any color, cut into 1-inch pieces)

1 medium red onion (cut into 1-inch pieces)

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a mixing bowl, whisk together honey, soy sauce, minced garlic, sesame oil, rice vinegar, ground ginger, salt, and pepper. Add the chicken cubes to the bowl and toss to coat them evenly in the marinade. Cover the bowl and refrigerate for at least 1 hour (or overnight for maximum flavor).

    Prepare the Vegetables: While the chicken is marinating, chop the bell peppers and red onion into uniform 1-inch pieces. This will ensure even cooking and make the skewers visually appealing.

      Assemble the Skewers: Once the chicken has marinated, preheat your grill or grill pan over medium-high heat. Thread the chicken and vegetable pieces onto the skewers, alternating between chicken and vegetables to create colorful, hearty skewers.
