1 pound boneless, skinless chicken breasts, sliced into thin strips

2 cups mixed bell peppers (red, yellow, green), sliced

1 cup broccoli florets

1 medium onion, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup honey

1/4 cup soy sauce (low sodium recommended)

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 tablespoons vegetable oil

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry for thickening)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Cooked rice or noodles (for serving)

Instructions
 

Prep the Chicken: In a large bowl, combine the sliced chicken with half of the soy sauce and cornstarch. Toss well to coat and let it marinate for about 15 minutes.

    Prepare the Sauce: In a separate bowl, mix together the remaining soy sauce, honey, rice vinegar, minced garlic, and ginger. Set aside.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken in a single layer and cook for about 4-5 minutes until golden brown and cooked through. Remove the chicken from the skillet and set it aside.

        Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onions, bell peppers, and broccoli. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

          Combine: Add the cooked chicken back to the skillet with the vegetables. Pour the honey-garlic sauce over the top and stir well to combine.

            Thicken the Sauce: Add the cornstarch slurry to the skillet. Stir constantly for about 1-2 minutes until the sauce thickens and is glossy.
