1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon apple cider vinegar

1 teaspoon ground ginger

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for heat)

Salt to taste

Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes before grilling)

Fresh parsley, chopped (for garnish)

Marinate the Chicken: In a large bowl, whisk together the honey, soy sauce, minced garlic, olive oil, apple cider vinegar, ground ginger, black pepper, and red pepper flakes (if using). Add the cubed chicken to the bowl and toss to coat evenly. Cover and refrigerate for at least 30 minutes to allow the flavors to meld (up to 4 hours if you have time).

    Prepare the Skewers: If you are using wooden skewers, now is the time to soak them in water to prevent burning on the grill. Meanwhile, preheat your grill to medium-high heat.

      Assemble the Skewers: Remove the marinaded chicken from the fridge. Thread the chicken cubes onto the skewers, leaving a bit of space between each piece for even cooking.

        Grill the Skewers: Place the chicken skewers on the preheated grill. Cook for about 10-15 minutes, turning them occasionally until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

          Serve: Once cooked, remove the skewers from the grill and let them rest for a couple of minutes. Garnish with chopped fresh parsley for a pop of color and freshness. Serve hot with your choice of sides, such as rice, salad, or grilled vegetables.
