Honey Glazed Meatball and Veggie Skewers

Ingredients
  

For the Meatballs:

1 lb (450g) ground beef or turkey

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 tsp onion powder

1 tsp dried oregano

Salt and pepper to taste

For the Honey Glaze:

1/3 cup honey

1/4 cup soy sauce

1 tbsp apple cider vinegar

1 tsp sesame oil

1 clove garlic, minced

For the Veggies:

1 red bell pepper, chopped into 1-inch pieces

1 zucchini, sliced into thick rounds

1 red onion, chopped into wedges

8 oz (225g) cherry tomatoes

Olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Meatball Mixture:

    - In a large bowl, combine the ground beef/turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, oregano, salt, and pepper. Mix until well combined.

      Form the Meatballs:

        - Shape the mixture into mini meatballs, about 1 inch in diameter. You should get approximately 20-24 meatballs.

          Make the Honey Glaze:

            - In a small saucepan, combine honey, soy sauce, apple cider vinegar, sesame oil, and minced garlic. Simmer over low heat for about 3-4 minutes, stirring occasionally until the glaze is slightly thickened. Remove from heat.

              Prepare the Skewers:

                - If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat your grill or grill pan over medium heat.

                  Assemble the Skewers:

                    - On each skewer, alternate threading the meatballs with the chopped vegetables: red bell pepper, zucchini, red onion, and cherry tomatoes. Leave a little space between each to ensure even cooking.

                      Grill the Skewers:

                        - Brush the skewers with olive oil, and season with salt and pepper. Place the skewers on the grill. Cook for 10-12 minutes, turning occasionally, until the meatballs are cooked through (internal temperature should reach 165°F/74°C).

                          Glaze the Skewers:

                            - During the last few minutes of grilling, brush the honey glaze over the skewers, turning them to coat evenly. Grill for an additional 2-3 minutes to caramelize the glaze.

                              Serve:

                                - Carefully remove the skewers from the grill and let them rest for a minute. Garnish with fresh parsley if desired.
