Hot Honey Chicken Bowls

Ingredients
  

For the Chicken:

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Oil, for frying

For the Hot Honey Sauce:

1/2 cup honey

2 tablespoons apple cider vinegar

1 tablespoon hot sauce (like Sriracha or your favorite)

A pinch of red pepper flakes (optional, for extra heat)

For the Bowls:

2 cups cooked rice (white or brown)

1 cup corn (fresh, frozen, or canned)

1 red bell pepper, diced

1 avocado, sliced

1 cup shredded cabbage (green or purple)

1/4 cup fresh cilantro, chopped

Lime wedges, for serving

Instructions
 

Marinate the Chicken:

    - In a bowl, combine the chicken pieces and buttermilk. Let marinate for at least 30 minutes, up to 2 hours in the fridge.

      Prepare the Hot Honey Sauce:

        - In a small saucepan over medium heat, combine honey, apple cider vinegar, hot sauce, and red pepper flakes. Whisk until well mixed and heat until slightly simmering. Remove from heat and set aside.

          Dredge and Fry the Chicken:

            - In a separate bowl, mix the flour, garlic powder, onion powder, smoked paprika, salt, and pepper.

              - Heat oil in a large skillet over medium-high heat (about 1/2 inch deep).

                - Remove chicken from marinate and dredge each piece in the seasoned flour, shaking off the excess.

                  - Carefully place chicken pieces in the hot oil and fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

                    Assembly of the Bowls:

                      - In serving bowls, layer the cooked rice, followed by corn, diced bell pepper, shredded cabbage, and avocado.
