2 cups cooked chicken, shredded (preferably rotisserie)

1 cup romaine lettuce, chopped

½ cup cherry tomatoes, halved

½ cup cucumber, diced

¼ cup red onion, finely sliced

¼ cup pepperoncini peppers, sliced

¼ cup Kalamata olives, pitted and sliced

½ cup provolone cheese, diced

¼ cup mayonnaise

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 teaspoon Italian seasoning

Salt and pepper, to taste

Crusty Italian bread or hoagie rolls, for serving

Instructions
 

Prepare the Chicken: If you haven't done so already, shred the cooked chicken into bite-sized pieces and place in a large mixing bowl.

    Add Vegetables: To the shredded chicken, add the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, pepperoncini peppers, and Kalamata olives. Toss gently to combine.

      Cheese Time: Add the diced provolone cheese to the bowl and toss again to evenly distribute.

        Make the Dressing: In a small bowl, whisk together the mayonnaise, red wine vinegar, Dijon mustard, Italian seasoning, salt, and pepper until well combined.

          Combine: Pour the dressing over the chicken and vegetable mixture. Gently fold until everything is evenly coated in the dressing. Adjust seasoning if necessary.

            Serve: Cut the Italian bread or hoagie rolls in half and lightly toast them if desired. Spoon the Italian grinder chicken salad into the bread, or serve it in a bowl with toasted bread on the side for dipping.
