1 pound Italian sausage (mild or spicy, based on preference)

1 medium onion, chopped

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

6 cups low-sodium chicken broth

1 (14.5-ounce) can diced tomatoes, undrained

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for heat)

4 cups fresh spinach, roughly chopped

1 cup small pasta (orzo, ditalini, or similar)

Salt and pepper to taste

2 tablespoons olive oil

Freshly grated Parmesan cheese, for serving

Fresh parsley, chopped for garnish (optional)

Instructions
 

Brown the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and no longer pink, approximately 5-7 minutes. Remove excess fat if needed.

    Sauté the Vegetables: Add the chopped onion, garlic, carrots, and celery to the pot. Sauté for about 5-6 minutes until the vegetables start to soften and the onions become translucent.

      Add Liquids and Seasoning: Pour in the chicken broth and add the diced tomatoes (with their juices). Stir in the oregano, basil, and red pepper flakes, if using. Bring the mixture to a gentle boil.

        Cook the Pasta: Once boiling, add the small pasta of your choice. Reduce the heat to a simmer, and cook according to the pasta package instructions (usually around 8-10 minutes), stirring occasionally until the pasta is al dente.

          Stir in the Spinach: Once the pasta is cooked, add the chopped spinach to the pot. Allow it to wilt and cook for an additional 2-3 minutes.

            Season and Serve: Taste the soup and adjust seasonings with salt and pepper as needed. Ladle the soup into bowls and top with freshly grated Parmesan cheese and chopped parsley if desired.
