Ingredients
  

2 cups shredded cooked chicken (rotisserie or poached)

1 cup cream cheese, softened

1/2 cup mayonnaise

1 cup shredded cheddar cheese

1/2 cup pickled jalapenos, chopped (adjust according to heat preference)

1/4 cup green onions, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Optional: 1/4 cup crispy bacon bits for added crunch

Instructions
 

Prepare the Chicken: If using rotisserie chicken, shred the meat with two forks. If poaching, cook chicken breasts in boiling water for about 15-20 minutes until cooked through, then shred when cool enough to handle.

    Mix the Base: In a large mixing bowl, combine the softened cream cheese and mayonnaise. Use a hand mixer or whisk to blend until smooth and creamy.

      Add Cheese and Flavorings: Stir in the shredded cheddar cheese, chopped jalapenos, green onions, garlic powder, onion powder, and salt and pepper to taste. If using, add crispy bacon bits for extra flavor.

        Combine with Chicken: Gently fold the shredded chicken into the cheese mixture until fully incorporated. Make sure the chicken is evenly coated in the creamy jalapeno popper mixture.

          Chill: Cover the bowl with plastic wrap or transfer to a sealed container. Refrigerate the chicken salad for at least 30 minutes to allow the flavors to meld.

            Serve: Once chilled, give the salad a good stir. You can serve it on a bed of lettuce, in lettuce wraps, or simply enjoy it on its own.
