1.5 lbs sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Steak: Pat the steak cubes dry with a paper towel. This will help achieve a nice sear. Season generously with salt, pepper, and smoked paprika on all sides.

    Sear the Meat: In a large skillet, heat the olive oil over high heat until it's shimmering. Add the steak bites in a single layer, making sure not to overcrowd the pan. Sear them for about 2-3 minutes on each side until they are browned and cooked to your desired level of doneness (medium-rare is about 130°F/54°C).

      Add Flavor: Once the steak bites are cooked, reduce the heat to medium and push them to one side of the skillet. Add the butter to the empty side of the skillet. Once melted, add the minced garlic, rosemary, and thyme. Let them cook for about 30 seconds until fragrant, making sure the garlic does not burn.
