Ingredients

4 boneless, skinless chicken breasts

2 ripe peaches, halved and pitted

1 cup BBQ sauce (your favorite brand or homemade)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and pepper, to taste

1 teaspoon smoked paprika

Optional garnish: fresh basil or cilantro leaves

Instructions

Prepare the Marinade: In a bowl, mix the BBQ sauce, olive oil, minced garlic, rosemary, thyme, smoked paprika, salt, and pepper. Stir until well combined.

Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour half of the BBQ marinade over the chicken, ensuring it's well coated. Marinate in the refrigerator for at least 30 minutes (up to 4 hours for more flavor).

Preheat the Grill: Preheat your grill to medium-high heat (around 400°F/200°C). If using a charcoal grill, ensure the coals are evenly distributed.

Prep the Peaches: While the grill is heating, brush the peach halves lightly with olive oil and season with a pinch of salt.

Grill the Chicken: Remove the chicken from the marinade, letting any excess drip off. Place chicken breasts on the preheated grill. Grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). During the last few minutes of grilling, brush the chicken with the reserved BBQ marinade for extra flavor.

Grill the Peaches: Place the peach halves cut-side down on the grill. Grill for about 4-5 minutes until they are slightly charred and softening.

Serve: Once the chicken is cooked, remove it from the grill and let it rest for 5 minutes. Serve each chicken breast with grilled peaches on the side. Drizzle any remaining BBQ sauce over the top and garnish with fresh basil or cilantro if desired.

Enjoy: Dive into this delightful combination of sweet and savory flavors!
