Ingredients

1 pound kielbasa sausage, sliced into 1/2-inch rounds

2 cups baby potatoes, halved (use a mix of red and yellow for color)

1 bell pepper (any color), sliced into strips

1 zucchini, sliced into half-moons

1 red onion, cut into wedges

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Optional: Hot sauce or mustard for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Sheet Pan: Line a large baking sheet with parchment paper for easy cleanup.

Mix the Ingredients: In a large bowl, combine the kielbasa, baby potatoes, bell pepper, zucchini, red onion, and minced garlic.

Season: Drizzle olive oil over the ingredients. Sprinkle with smoked paprika, oregano, salt, and pepper. Toss everything together until well-coated in oil and seasonings.

Spread on Sheet Pan: Transfer the mixture to the lined baking sheet, spreading it out into a single layer for even cooking.

Roast in the Oven: Roast in the preheated oven for about 25-30 minutes, or until the potatoes are tender and slightly crispy, and the kielbasa is browned. Stir halfway through for even cooking.

Garnish and Serve: Once done, remove from the oven and sprinkle with fresh parsley. Serve hot, with optional hot sauce or mustard on the side for a flavor kick.
