Lazy Chicken Parmesan Grilled Cheese

2 slices of crusty bread (like sourdough or ciabatta)

1 cup cooked chicken, shredded or sliced

1/2 cup marinara sauce

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

2 tablespoons butter

Fresh basil leaves (for garnish)

Salt and pepper to taste

Prepare the Chicken Mixture: In a medium bowl, combine the cooked chicken, marinara sauce, mozzarella cheese, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

    Build the Sandwich: Take one slice of bread and spread half of the chicken mixture on top. Place the second slice of bread over it to create a sandwich. Repeat this process for a second sandwich if you’re making more than one.

      Heat the Pan: In a large skillet, melt 1 tablespoon of butter over medium heat.

        Grill the Sandwich: Once the butter is sizzling, place the assembled sandwich in the skillet. Grill for about 3-4 minutes or until the bottom is golden brown and the cheese is beginning to melt. Flip the sandwich carefully and add the remaining butter to the pan. Grill the other side until golden brown and crispy (another 3-4 minutes).

          Serve: Remove the sandwich from the skillet and let it cool slightly before cutting it in half. If desired, garnish with fresh basil leaves for an extra burst of flavor.
