1 pound fresh green beans, trimmed

3 tablespoons olive oil

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon Dijon mustard

Salt and pepper to taste

¼ cup red onion, thinly sliced

½ cup cherry tomatoes, halved

¼ cup feta cheese, crumbled

2 tablespoons fresh parsley, chopped

1 tablespoon toasted pine nuts (optional)

Instructions
 

Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the trimmed green beans and cook for about 3-4 minutes until they are bright green and tender-crisp. Drain and immediately transfer them to a bowl of ice water to stop the cooking process. Once cooled, drain again and set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, Dijon mustard, salt, and pepper until emulsified.

      Assemble the Salad: In a large mixing bowl, combine the cooled green beans, sliced red onion, and cherry tomatoes. Pour the lemon garlic dressing over the salad and toss gently to combine.

        Add Toppings: Sprinkle the crumbled feta cheese, chopped parsley, and toasted pine nuts (if using) over the top of the salad. Give it one last gentle toss to distribute the toppings evenly.
