1 pound chicken tenders

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Zest of 1 lemon

2 large eggs

2 tablespoons fresh lemon juice

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the coating: In a medium-sized bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, black pepper, and lemon zest. Mix until well combined.

      Prepare the egg mixture: In another bowl, whisk together the eggs, fresh lemon juice, and olive oil until fully combined.

        Coat the chicken: Dip each chicken tender first into the egg mixture, letting the excess drip off, and then into the breadcrumb mixture. Press the breadcrumbs onto the chicken to ensure a good, even coating.
