Lemon Garlic Turkey Tenderloin Sheet Pan

1.5 pounds turkey tenderloin

3 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 2 lemons

1 tablespoon fresh thyme (or 1 teaspoon dried thyme)

1 tablespoon fresh rosemary (or 1 teaspoon dried rosemary)

1 teaspoon salt

½ teaspoon black pepper

1 pound baby potatoes, halved

1 red bell pepper, sliced

1 yellow bell pepper, sliced

Fresh parsley, for garnish (optional)

Lemon wedges, for serving

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Marinade: In a medium bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, thyme, rosemary, salt, and pepper until well combined.

      Marinate the Turkey: Place the turkey tenderloin in a resealable plastic bag or a shallow dish. Pour the marinade over the turkey, ensuring it's well coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

        Prepare the Vegetables: While the turkey is marinating, prepare the vegetables. In a large bowl, combine the halved baby potatoes and sliced bell peppers. Drizzle with a little olive oil, and season with salt and pepper. Toss until the vegetables are evenly coated.

          Arrange on Sheet Pan: Line a large sheet pan with parchment paper or lightly grease it with cooking spray. Place the marinated turkey tenderloin in the center of the sheet pan. Arrange the seasoned baby potatoes and bell peppers around the turkey in a single layer.

            Bake: Transfer the sheet pan to the preheated oven and bake for 25-30 minutes, or until the turkey reaches an internal temperature of 165°F (74°C) and the vegetables are tender and slightly caramelized. If you want a bit of a char, broil for an additional 2-3 minutes at the end of cooking.

              Rest and Serve: Once cooked, remove the sheet pan from the oven and let the turkey rest for 5 minutes before slicing. Garnish with fresh parsley if desired. Serve with lemon wedges on the side for an extra burst of freshness.
