8 chicken drumsticks

3 tablespoons olive oil

3 tablespoons fresh lemon juice (from about 1 large lemon)

Zest of 1 lemon

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Marinade: In a large bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, rosemary, paprika, salt, and black pepper. Whisk until well blended.

      Marinate the Drumsticks: Add the chicken drumsticks to the bowl, ensuring they are thoroughly coated with the marinade. For best results, cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.

        Arrange on Baking Sheet: Once marinated, transfer the drumsticks to the prepared baking sheet, arranging them in a single layer. Reserve any leftover marinade for basting.

          Roasting: Place the baking sheet in the preheated oven and roast the drumsticks for 30-35 minutes, or until the chicken is cooked through and the skin is crispy. Halfway through roasting, baste the chicken with the reserved marinade.

            Check Doneness: To ensure doneness, the internal temperature of the chicken should reach 165°F (74°C). If desired, turn on the broiler for the last 2-3 minutes to achieve extra crispiness.
