Ingredients

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

Juice of 1 large lemon

Zest of 1 lemon

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

Zest of 1 lemon (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). This high temperature will help make the skin crispy and golden.

Prepare the Marinade: In a bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, thyme, rosemary, oregano, salt, and black pepper until well combined.

Marinate the Chicken: Place the chicken thighs in a large resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish, then refrigerate for at least 30 minutes (up to 2 hours for more flavor).

Arrange the Chicken: Remove the chicken from the marinade and place it skin-side up on a baking sheet lined with parchment paper. Discard the leftover marinade.

Roast the Chicken: Roast in the preheated oven for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (75°C). For extra crispiness, broil on high for an additional 2-3 minutes, keeping a close eye to avoid burning.

Rest the Chicken: Once done, remove the chicken from the oven and let it rest for about 5 minutes. This allows the juices to redistribute for a juicier outcome.

Garnish and Serve: Transfer the chicken to a serving platter, sprinkle with additional lemon zest and fresh parsley for a burst of color and flavor. Serve warm with your choice of sides, like roasted vegetables or a fresh salad.
