Ingredients

1 box (14.3 oz) graham crackers

2 cups heavy whipping cream

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup lemon curd (store-bought or homemade)

Zest of 2 lemons

Fresh berries for garnish (optional)

Instructions

Prepare Your Ingredients: Start by gathering all your ingredients. Ensure your heavy whipping cream is cold, as this will help it whip up nicely.

Whip the Cream: In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Use a hand mixer or stand mixer to whip the cream until it forms stiff peaks. Be careful not to overbeat!

Mix Lemon Curd and Zest: In a separate bowl, gently fold the lemon curd and lemon zest together until well combined.

Combine Cream and Curd: Carefully fold the whipped cream into the lemon curd mixture. This will create a light, fluffy filling. Be gentle to maintain the airiness of the whipped cream.

Assemble the Cake: In a 9x13 inch dish, lay down a single layer of graham crackers, covering the bottom completely. Spread a layer of the lemon filling over the graham crackers. Repeat this process with more layers of graham crackers and lemon filling, finishing with a final layer of the lemon filling on top.

Chill the Cake: Cover the dish with plastic wrap and refrigerate for at least 6 hours, or preferably overnight. This allows the graham crackers to soften and the flavors to meld beautifully.

Serve: Once chilled, slice the cake into squares and serve cold. If desired, garnish with fresh berries and extra lemon zest on top for a lovely presentation.
