1/2 cup buttermilk (or milk with a splash of vinegar)

2 large eggs

Zest of 1 large lemon

1 teaspoon pure vanilla extract

1 1/2 cups fresh raspberries (or frozen, thawed and drained)

2 tablespoons lemon juice

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until thoroughly combined.

      Whisk Wet Ingredients: In a separate bowl, combine the melted butter, buttermilk, eggs, lemon zest, vanilla extract, and lemon juice. Whisk until the mixture is smooth and well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold them together using a spatula or wooden spoon. Be careful not to overmix; a few lumps are okay.

          Add Raspberries: Carefully fold in the raspberries, ensuring they are distributed evenly through the batter without mashing them.

            Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. This will allow room for the muffins to rise.

              Bake: Bake in the preheated oven for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
