1 ½ cups all-purpose flour

1 cup fresh raspberries (plus extra for garnish)

½ cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

Zest of 1 lemon

¼ cup unsalted butter, melted

1 large egg

½ cup plain Greek yogurt

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

Optional: Powdered sugar for dusting

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and lemon zest until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk together the melted butter, egg, Greek yogurt, lemon juice, and vanilla extract until smooth.

        Combine Mixtures: Slowly pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix, as this can lead to dense muffins.
