Lentil and Sweet Potato Stew

1 cup green or brown lentils, rinsed and drained

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

2 carrots, sliced

1 red bell pepper, diced

1 can (14 oz) diced tomatoes (with juice)

4 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon ground coriander

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté for about 3-4 minutes until they become translucent and fragrant.

    Add Vegetables: Stir in the diced sweet potatoes, carrots, and red bell pepper. Cook for another 5-7 minutes, allowing the vegetables to soften slightly.

      Mix in Spices: Sprinkle in the ground cumin, smoked paprika, ground coriander, and dried thyme. Stir well to combine, allowing the spices to toast for 1-2 minutes.

        Add Lentils and Tomatoes: Pour in the rinsed lentils and diced tomatoes (with their juice). Stir the mixture to incorporate everything evenly.

          Simmer: Add the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30-35 minutes, or until the lentils and sweet potatoes are tender.

            Season: Taste the stew and adjust seasoning with salt and pepper as needed. If necessary, add a splash more vegetable broth or water for desired consistency.

              Serve: Ladle the stew into bowls and garnish with fresh parsley, if desired. Enjoy the delightful flavors and hearty texture!
