4 salmon fillets (6 ounces each)

2 lemons (1 sliced, 1 juiced)

4 tablespoons olive oil

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

2 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

1 cup cherry tomatoes, halved

1 cup asparagus, trimmed and cut into 2-inch pieces

Fresh parsley for garnish (optional)

Instructions
 

Prep the Oven: Preheat your oven to 400°F (200°C). If you’re using a grill, preheat to medium-high heat.

    Prepare the Foil Packs: Tear off four large sheets of aluminum foil (about 12 inches each) and lay them flat on a clean surface.

      Season the Salmon: In a small bowl, mix the olive oil, lemon juice, minced garlic, dill, salt, and black pepper together until well combined. Place one salmon fillet in the center of each foil sheet.

        Add Vegetables: Surround each salmon fillet with an equal amount of cherry tomatoes and asparagus. Drizzle the remaining olive oil mix over the salmon and vegetables, and top each fillet with lemon slices.

          Seal the Packs: Fold the sides of the foil over the salmon and veggies, creating a sealed packet. Make sure to leave some space for steam to circulate inside.

            Cooking: Place the foil packs directly on the oven rack or on the grill. Cook for about 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.

              Serve: Carefully unwrap the foil packs (watch out for hot steam!) and transfer the salmon and veggies to plates. Garnish with fresh parsley if using, and enjoy!
