1 pound frozen tater tots

1 cup sharp cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

1 cup cooked ground beef or chorizo (optional)

1 can (15 oz) black beans, rinsed and drained

1 cup diced tomatoes (fresh or canned)

1/2 cup sliced jalapeños (fresh or pickled)

1/2 cup sour cream

1/2 cup guacamole

2 green onions, chopped

1 teaspoon taco seasoning

Olive oil, for drizzling

Fresh cilantro, for garnish

Salt and pepper, to taste

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Bake the Tater Tots: Spread the frozen tater tots evenly on a large baking sheet. Drizzle a little olive oil over them and sprinkle with salt and pepper. Bake for 25 minutes or until they are golden and crispy, flipping halfway through for even cooking.

      Prepare the Toppings: While the tater tots are baking, mix the cooked ground beef or chorizo with taco seasoning in a bowl. If you’re using the meat, make sure it’s fully cooked and heated through.

        Layer the Nacho Toppings: Once the tater tots are done baking, remove them from the oven. Sprinkle the cooked meat (if using), black beans, diced tomatoes, jalapeños, and both cheeses evenly over the tater tots, making sure everything is nicely distributed.

          Melt the Cheese: Return the loaded tater tots to the oven and bake for an additional 5-7 minutes, or until the cheese has melted and is bubbly.
