Loaded Veggie Pita Pizzas

4 whole wheat pita breads

1 cup marinara sauce (or tomato sauce of your choice)

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

1 red bell pepper, thinly sliced

1 small zucchini, thinly sliced

1 cup fresh spinach

1/2 cup mushrooms, sliced

1/2 small red onion, thinly sliced

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

1/4 teaspoon crushed red pepper flakes (optional for heat)

Salt and pepper to taste

Olive oil for drizzling

Fresh basil leaves for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 450°F (230°C). This high temperature will help the pita crisp up nicely while the toppings cook.

    Prepare the Pitas: Place the whole wheat pitas on a baking sheet. Lightly brush or drizzle a little olive oil on each pita for extra flavor and crispiness.

      Spread the Sauce: Evenly spread approximately 1/4 cup of marinara sauce on each pita, leaving a little space around the edges for the crust.

        Layer the Cheese: Sprinkle about 1/4 cup of shredded mozzarella cheese over the sauce on each pita, followed by a sprinkle of crumbled feta cheese for added creaminess.

          Add the Veggies: Distribute the sliced red bell pepper, zucchini, mushrooms, and red onion evenly over each pizza. Add a handful of fresh spinach to each, which will wilt beautifully during baking.

            Season: Sprinkle the pizzas with dried oregano, garlic powder, crushed red pepper flakes (if using), and a pinch of salt and pepper. This will enhance the flavors of the toppings.

              Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the pitas are golden brown.
