1 medium head of cauliflower (about 2-3 cups riced)

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 large egg, beaten

1/2 cup almond flour (or coconut flour for an even lower carb option)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika (optional, for extra flavor)

Olive oil spray (for baking)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Rice the Cauliflower: Cut the cauliflower into florets and place them in a food processor. Pulse until they resemble fine rice grains. Alternatively, you can grate them using a box grater.

      Steam the Cauliflower: Transfer the riced cauliflower to a microwave-safe bowl and cover it with a damp paper towel. Microwave on high for about 5-7 minutes, or until softened. Let it cool slightly.

        Squeeze Out Moisture: Once the cauliflower has cooled, place it on a clean kitchen towel or cheesecloth. Gather the edges and twist to squeeze out as much moisture as possible. This is crucial for achieving crispy tots!

          Mix the Ingredients: In a large bowl, combine the riced and dried cauliflower, mozzarella cheese, Parmesan cheese, beaten egg, almond flour, garlic powder, onion powder, salt, black pepper, and smoked paprika (if using). Mix everything until well incorporated.

            Shape the Tots: Using your hands, grab about 2 tablespoons of the mixture and shape it into small tot-like cylinders (about 1 inch thick). Repeat until the mixture is used up.

              Bake the Tots: Place the shaped tots on the prepared baking sheet. Spray lightly with olive oil to aid in browning. Bake in the preheated oven for 20-25 minutes or until golden and crispy, flipping halfway through for even cooking.
