2 cups rolled oats

1 cup milk (or dairy-free alternative)

1/2 cup pure maple syrup

1/4 cup packed brown sugar

1/2 cup pecans, chopped

1/2 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

2 ripe bananas, mashed (or 1/2 cup applesauce)

1/4 cup dried cranberries or raisins (optional)

Additional pecans for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin (12-cup) with cooking spray or line with muffin liners.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas (or applesauce), milk, pure maple syrup, brown sugar, and vanilla extract. Whisk until well combined.

      Combine Dry Ingredients: In another bowl, mix together the rolled oats, baking powder, cinnamon, and salt. Stir until evenly distributed.

        Combine Both Mixtures: Gradually add the dry ingredients to the wet mixture and stir until just combined. Be careful not to overmix.

          Add Nuts and Optional Ingredients: Fold in the chopped pecans and dried cranberries or raisins if using. Allow the mixture to sit for about 5 minutes so that the oats can absorb some of the liquid.

            Fill the Muffin Tin: Evenly distribute the oatmeal mixture into the prepared muffin tin, filling each cup to the top. If desired, sprinkle a few additional chopped pecans on top of each cup for extra crunch.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

                Cool and Serve: Let the oatmeal cups cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy them warm or at room temperature!
