For the crust:

1 ½ cups all-purpose flour

½ cup cold unsalted butter, cubed

2 tablespoons granulated sugar

1/4 teaspoon salt

5-6 tablespoons ice water

For the filling:

4 cups ripe pears, peeled, cored, and thinly sliced (about 4 medium pears)

1/2 cup walnuts, chopped

1/2 cup maple syrup

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon cornstarch (for thickening)

Pinch of salt

For the topping:

1/4 cup rolled oats

1/4 cup brown sugar

2 tablespoons melted butter

1/4 teaspoon cinnamon

1/4 cup chopped walnuts (optional for extra crunch)

Instructions
 

Prepare the Pie Crust:

    - In a large bowl, combine the flour, sugar, and salt. Add the cold cubed butter and mix with a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

      - Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork.

        - Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.

          Preheat the Oven:

            - Preheat your oven to 375°F (190°C).

              Make the Filling:

                - In a large bowl, toss the sliced pears with lemon juice, maple syrup, vanilla extract, cinnamon, nutmeg, cornstarch, and a pinch of salt until well combined. Gently fold in the chopped walnuts.

                  Roll Out the Crust:

                    - On a floured surface, roll out the chilled dough into a 12-inch circle. Carefully place it into a 9-inch pie dish. Trim the edges and make decorative crimping if desired.

                      Assemble the Pie:

                        - Pour the pear filling into the prepared pie crust, spreading it out evenly.

                          Prepare the Topping:

                            - In a small bowl, mix the rolled oats, brown sugar, melted butter, cinnamon, and chopped walnuts (if using) until crumbly. Sprinkle this mixture evenly over the pear filling.

                              Bake the Pie:

                                - Bake in the preheated oven for 45-50 minutes, or until the topping is golden brown and the filling is bubbling. If the crust edges start to brown too quickly, cover them with strips of aluminum foil.

                                  Cool and Serve:

                                    - Allow the pie to cool for at least 30 minutes before slicing. This will help the filling set up a bit more. Serve warm or at room temperature with a scoop of vanilla ice cream, if desired!
