Ingredients

2 boneless, skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 tablespoon olive oil

8 oz penne pasta

1 tablespoon butter

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Fresh basil leaves, for garnish

Instructions

Prepare the Chicken: Season the chicken breasts with salt, pepper, and garlic powder on both sides.

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Once hot, add the seasoned chicken breasts. Cook for 6-7 minutes per side or until golden brown and cooked through. Remove from the skillet and let rest. Slice into strips once cool.

Sauté Garlic and Tomatoes: In the same skillet, add butter and reduce heat to medium. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the cherry tomatoes and cook until they start to soften, about 2-3 minutes.

Make the Sauce: Pour in the heavy cream and chicken broth. Stir in the grated Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Let the sauce simmer for about 5 minutes, thickening slightly.

Combine: Add the cooked pasta to the skillet and toss to coat in the creamy sauce. If the sauce is too thick, gradually add in reserved pasta water until you reach desired consistency.

Add Chicken: Gently fold in the sliced chicken. Cook for an additional 2-3 minutes to heat everything through.

Garnish and Serve: Remove from heat and garnish with fresh basil leaves. Serve immediately with extra Parmesan on the side.
