Mediterranean Couscous Salad

Ingredients
  

1 cup couscous

1 ¼ cups boiling vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, finely chopped

½ cup Kalamata olives, pitted and sliced

½ cup feta cheese, crumbled

¼ cup fresh parsley, chopped

¼ cup fresh mint, chopped

3 tablespoons olive oil

2 tablespoons lemon juice

Salt and pepper to taste

Optional: 1 teaspoon dried oregano

Instructions
 

Prepare the Couscous: In a large bowl, pour the boiling vegetable broth over the couscous. Cover the bowl with plastic wrap or a lid and let it sit for about 5 minutes, or until the couscous has absorbed the liquid. Fluff with a fork and set aside to cool.

    Chop the Vegetables: While the couscous is cooling, chop the cherry tomatoes, cucumber, and red onion. Make sure to keep the pieces bite-sized for easy mixing and eating.

      Mix the Dressing: In a separate small bowl, whisk together the olive oil, lemon juice, salt, pepper, and dried oregano (if using). Adjust seasoning to taste.

        Combine Ingredients: In a large mixing bowl, add the cooled couscous, chopped vegetables, sliced olives, crumbled feta, parsley, and mint.

          Dress the Salad: Pour the dressing over the salad mixture and toss gently to combine everything well without breaking the feta.

            Serve & Enjoy: You can serve the Mediterranean Couscous Salad immediately, or let it chill in the refrigerator for 30 minutes to allow the flavors to meld.
