1½ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground ginger

1 teaspoon ground cinnamon

½ teaspoon ground cloves

¼ teaspoon salt

1 stick (½ cup) unsalted butter, softened

1 cup packed brown sugar

½ cup unsulfured molasses

1 large egg

1 teaspoon vanilla extract

½ cup granulated sugar (for rolling)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.

      In a large bowl, cream the softened butter and brown sugar until light and fluffy, about 3-4 minutes.

        Add the molasses, egg, and vanilla extract to the butter mixture and mix until well combined.

          Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

            Using a cookie scoop or your hands, form the dough into 1-inch balls and roll each ball in granulated sugar.

              Place the cookie balls on the prepared baking sheet, about 2 inches apart.

                Bake for 8-10 minutes, or until the edges are set but the centers are still soft.

                  Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
