Ingredients

1 lb ground beef

1 lb ground pork

1 cup finely chopped cremini mushrooms

1 medium onion, finely diced

2 cloves garlic, minced

1 cup shredded Swiss cheese

1 cup breadcrumbs (preferably Italian-seasoned)

2 large eggs, beaten

1/2 cup milk

2 tbsp Worcestershire sauce

1 tbsp Dijon mustard

1 tsp dried thyme

1 tsp salt

1/2 tsp black pepper

1/4 cup ketchup (for glazing)

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Start by preheating your oven to 350°F (175°C).

Sauté Vegetables: In a medium skillet, heat a tablespoon of olive oil over medium heat. Add the chopped mushrooms, onion, and garlic. Sauté until the mushrooms are soft and the onions are translucent, about 5-7 minutes. Remove from heat and let cool slightly.

Mix Ingredients: In a large mixing bowl, combine the ground beef and ground pork. Add in the sautéed vegetables, breadcrumbs, Swiss cheese, beaten eggs, milk, Worcestershire sauce, Dijon mustard, thyme, salt, and black pepper. Mix everything together until just combined; be careful not to overmix as this may make the meatloaf tough.

Shape the Loaf: Transfer the meat mixture to a loaf pan or form a loaf shape on a lined baking sheet. Use your hands to shape it into a nice, compact loaf, about 1-2 inches thick.

Glaze the Meatloaf: Spread the ketchup evenly over the top of the meatloaf to create a lovely glaze.

Bake: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).

Rest Before Slicing: Remove the meatloaf from the oven and let it rest for about 10-15 minutes before slicing. This will allow the juices to redistribute, making for a moist and flavorful meatloaf.

Serve: Slice and serve warm, garnished with fresh parsley. This meatloaf pairs excellently with mashed potatoes or a fresh green salad.
