1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

2 tablespoons sugar

16 oz cream cheese, softened

3/4 cup granulated sugar

1/2 cup sour cream

1/4 cup key lime juice (freshly squeezed is best)

Zest of 2 key limes

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 tablespoons powdered sugar

Lime slices and whipped cream for garnish (optional)

Instructions
 

Prepare the crust: In a medium bowl, mix together the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Stir until the mixture resembles wet sand.

    Assemble the crust: Evenly distribute the graham cracker mixture into the bottom of 6 small cups or ramekins, pressing down firmly to create a solid base. Set aside.

      Make the cheesecake filling: In a large mixing bowl, combine the softened cream cheese and granulated sugar. Beat with an electric mixer until smooth and creamy, about 2-3 minutes.

        Add the key lime ingredients: Mix in the sour cream, key lime juice, lime zest, and vanilla extract until fully incorporated and smooth. Scrape down the sides of the bowl as needed.

          Whip the cream: In another bowl, whip the heavy cream and powdered sugar together until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined. Be careful not to deflate the whipped cream!

            Fill the cups: Spoon the cheesecake mixture over the prepared crusts in the cups, filling them to the top. Smooth the tops with a spatula.

              Chill: Cover the cups with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the cheesecake to set.
