Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar (for crust)

1 cup heavy whipping cream

1 (14 oz) can sweetened condensed milk

1 cup fresh lemon juice (about 4-5 lemons)

Zest of 2 lemons

1 tsp vanilla extract

¼ tsp salt

Fresh mint leaves (for garnish, optional)

Instructions

Make the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish. Refrigerate for 15 minutes to set.

Prepare the Filling: In a large mixing bowl, whip the heavy cream until stiff peaks form. In another bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, vanilla extract, and salt until smooth and well combined.

Combine: Gently fold the whipped cream into the lemon mixture in three parts, ensuring you retain the volume and airiness of the whipped cream.

Assemble the Pie: Pour the lemon filling into the chilled crust, smoothing the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours or until set (overnight is best!).

Serve: Once set, slice the pie into wedges and garnish with fresh mint leaves if desired. Enjoy your refreshing slice of citrus goodness!
