Ingredients

For the Base:

1 ½ cups digestive biscuits, crushed

½ cup unsalted butter, melted

2 tablespoons brown sugar

For the Caramel Layer:

1 can (14 oz) sweetened condensed milk

½ cup unsalted butter

½ cup brown sugar

1 teaspoon vanilla extract

For the Chocolate Topping:

1 cup dark chocolate chips

2 tablespoons coconut oil (optional, for a shinier finish)

Instructions

Prepare the Base:

    - In a medium bowl, combine the crushed digestive biscuits, melted butter, and brown sugar. Mix until the crumbs are well-coated and resemble wet sand.

      - Press the mixture firmly into the bottom of a lined 9x9-inch square baking pan, ensuring it is even. Chill in the refrigerator while you prepare the caramel.

        Make the Caramel:

          - In a saucepan over medium heat, combine the sweetened condensed milk, butter, brown sugar, and vanilla extract. Stir continuously until the mixture comes to a gentle boil.

            - Once boiling, reduce the heat to low and cook for an additional 5-7 minutes, stirring constantly, until it thickens and turns a golden caramel color.

              - Carefully pour the caramel over the chilled biscuit base and spread it evenly. Allow it to cool to room temperature for about 30 minutes, then refrigerate for another hour until set.

                Prepare the Chocolate Topping:

                  - In a small saucepan or microwave-safe bowl, melt the dark chocolate chips along with the coconut oil (if using) until smooth. Stir every 30 seconds in the microwave or continuously in the saucepan to avoid burning.

                    - Once melted, remove the caramel layer from the fridge and pour the chocolate over it, spreading it evenly.

                      Chill and Serve:

                        - Return the pan to the refrigerator and let it chill for at least 2 hours to set completely.

                          - Once set, remove from the pan using the parchment paper, and slice into squares or bars.

                            - Serve chilled and enjoy your indulgent No-Bake Millionaire’s Shortbread!
