No Bake Oreo Peanut Butter Cup Cheesecake

24 Oreo cookies, finely crushed

1/2 cup unsalted butter, melted

1 cup creamy peanut butter

1 cup powdered sugar

2 cups cream cheese, softened

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/2 cup mini peanut butter cups, chopped (plus extra for topping)

Optional: extra crushed Oreos for garnish

Prepare the Crust: In a medium bowl, combine the finely crushed Oreo cookies with the melted butter. Mix until the crumbs are well coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Refrigerate while you prepare the filling.

    Make the Cream Cheese Mixture: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the creamy peanut butter and powdered sugar, mixing until well combined. Stir in the vanilla extract.

      Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form.

        Combine Mixtures: Gently fold the whipped cream into the cream cheese and peanut butter mixture until fully incorporated, being careful not to deflate the whipped cream.

          Add Candy: Fold in the chopped mini peanut butter cups into the cheesecake filling.

            Assemble the Cheesecake: Pour the cheesecake filling over the prepared Oreo crust. Smooth the top with a spatula and press down gently to ensure it's even.

              Chill: Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or ideally overnight, to allow it to set properly.

                Serve: Remove the cheesecake from the springform pan and transfer it to a serving platter. Top with extra crushed Oreos and remaining peanut butter cups as desired. Slice and enjoy!
